Verner Wheelock is set to unveil a new edition of his influential work, “Healthy Eating: The Big Mistake,” with a launch event on the evening of May 10th at Elsworth Mill, Skipton. This revised edition builds on the original’s critique of conventional dietary advice, such as the emphasis on carbohydrates, which Wheelock argues has contributed significantly to public health issues.
Highlighting the dangers of sugar and refined carbs, Wheelock points to their role in the rise of Type 2 Diabetes, a condition that can often be reversed through a low-carb diet. The latest edition broadens its scope, delving into the perils of Ultra Processed Foods (UPF) and the impact of seed oils on health.
Research, including studies led by Carlos Monteiro in Brazil, has exposed UPFs as concoctions of chemically modified food substances, packed with additives that enhance flavor and appearance but degrade health. Dr. Chris van Tullekan’s analysis links UPF consumption to increased rates of cancer, chronic diseases, and mental health issues.
The book also addresses the growing prevalence of UPFs in diets in the UK and the US, now exceeding 50%, and the associated health risks, including a marked increase in mortality from cancers with higher UPF intake.
Additionally, Wheelock critiques the widespread use of Polyunsaturated Fats (PUFAs) derived from seeds like corn, sunflower, and soyabean. These oils, processed under high heat and chemical solvents, are high in omega-6 fats, contributing to an imbalance that Wheelock argues is harmful, advocating instead for a balanced ratio of omega-6 to omega-3 fats.
The launch event will feature a talk by Wheelock, highlighting the key insights of his book, alongside an exhibition of diet-compliant products. Attendees will receive a signed copy of the book and enjoy a meal of low-carb dishes prepared by Chef Bruce Elsworth.
